Friday evenings have a celebratory feel about them, best toasted with a cocktail (or mocktail, if that’s your preference). And every good cocktail needs a nibble - to line the stomach, don’t ya know, and keep things tidy. Small and simple is key - especially if dinner later is on the cards.

A classic toothpick-stacked tapa courtesy of the Basque country is the Gilda - and I love everything on its little spike: olives, anchovies, and pickled peppers. Combined, those three ingredients create a perfectly tart and briny cocktail companion. 

And if you’re after a suitably Spanish beverage to match, I recommend the Golden Boy: sherry, simple syrup, bitters and Cava (or any sparkling wine of your choice), with a lemon twist.
