Missed out on one of our Cannoli Kits? Fear not! Save yourself the effort of making cannoli shells and grab a pack from Padula’s - but claim the final credit by making your own cannoli filling!

Classic Sicilian cannoli filling calls for addition of a little glacé fruit or peel - you can find a great selection at the deli, available to purchase by the piece and in whatever combination pleases you. And of course we have fluffy ricotta and mascarpone too!

The recipe below is sufficient to fill 12 mini cannoli shells.

Ingredients

250g ricotta, strained

100g mascarpone

100g icing sugar

2T glacé fruit/peel (optional)

For dipping:

Chocolate chips, flakes or sprinkles

Chopped pistachios or toasted hazelnuts

Method

Beat the ricotta until smooth and fluffy, then beat in the mascarpone and sifted icing sugar until well combined.

Spoon into a piping bag and use to fill the cannoli just before serving (otherwise the filled shells will absorb moisture soften over time).

Dip the cannoli ends into your sprinkles of choice - perfetto!
